Pan Seared Scallops
Ready in 16 minutes 2 Serves
Ingredients
500g Scallops
2 tbs Olive Oil
2 tbs Butter
1 tbs Sea Salt, also use a little to sprinkle on top after cooked
Half a Lemon
Directions
-
Heat a cast iron pan to high heat. You want it to be hot.
-
Make sure your scallops are defrosted all the way. Sprinkle each side with salt then place them on paper towels for about 10 minutes and pat them dry. You want them to be completely dry!
-
Salt each side again.
-
Add some olive oil to the pan. Put the scallops about 2 inches apart in the pan and sear them for about 3 minutes without moving them.
-
Add the butter into the pan and spread all over then flip them and sear for another 3 minutes. Each side should be a golden brown then take them out and serve on a plate while hot.
-
You can drizzle some of the butter from the pan and add a little bit more salt on top and some fresh herbs and a squeeze of lemon on top.
